Izuku makes sure to get a good grip on the bottom stem of the mushroom where Katsuki isn't hacking it to pieces, trusting him not to take off a finger (or his whole hand) as he does. He may not have his Quirk, but he's still physically fit thanks to regular training. So once Katsuki finally cuts the head of the mushroom off again...
